LORAfied Mini Waffle Sausage Sticks
2 cups all-purpose flour
2 Tablespoons sugar
1 Tablespoon plus 1 teaspoon baking powder
½ teaspoon salt
2 large eggs
1½ cups milk (any kind)
â…“ cup (2/3 stick) melted butter (cooled to room temperature)
1 teaspoon vanilla extract
Nonstick cooking spray or melted butter, for greasing
18 cooked sausage patties (pork, chicken, or plant-based), thawed if frozen
18 wooden coffee stir sticks
Melted butter and maple syrup, for dipping (in separate bowls or mixed together)
1. Preheat your waffle iron according to the manufacturer’s instructions
2. Whisk the flour, sugar, baking powder, and salt in a medium bowl. Whisk the eggs, milk, butter, and vanilla in a large bowl.
3. Stir the dry mixture into the wet mixture until just combined, taking care not to overmix. If the batter seems too thick (it should be pourable), stir in a little more milk.
4. Spray your preheated waffle iron with cooking spray.
5. Insert a stick into the edge of each sausage through the center to the other side. Dip a patty into the batter and then set it in the waffle iron.
6. Close the lid and cook according to the waffle iron manufacturer’s instructions, or until golden brown.
7. Repeat steps 5 and 6 to make the remaining waffles, spraying with more cooking spray between batches to prevent sticking.
8. Serve with bowls of melted butter and maple syrup for dipping.
