Low Carb Diet dinner Hack: 5 Ingredient Enchilada Chicken

Enchilada Chicken HackLow carb enchilada chicken anyone? This easy, 5 ingredient 1 pot wonder is one you can make tonight! It’s a budget-friendly family favorite that transforms a packet of taco seasoning and jar of enchilada sauce into a fancy dish you can proudly serve to anyone. No cooking skills needed, just toss it all in a dish, bake and enjoy! This is GF and can be made DF, too!

LORAfied Enchilada Chicken

Ingredients:
1 pkg chicken (I used thighs, but you can use your favorite)
1 jar enchilada sauce
1/2 – 3/4 cup sour cream
1 pkg taco seasoning (may not need entire packet)
1 small onion

Directions:

Enchilada Chicken HackPreheat oven to 400F. Slice onion and layer on bottom of pan, place chicken on top. Season both sides of chicken with taco seasoning (be careful to not over season.) Mix enchilada sauce and sour cream together, pour on top. Bake for 40-45 minutes.

Serve with extra sour cream and guacamole, if desired. My kids love this with Mexican rice, while I keep it low carb with cauliflower rice!

The Viral Oreo Stuffed Cinnamon Roll Hack

Do you like Oreos or cinnamon rolls more? Why choose? With this super easy and affordable 2 ingredient Oreo stuffed cinnamon roll hack, you can have both! These little treats are a huge hit and cheat day worthy! Have some fun and try it with different flavored Oreos.

Ingredients:

1 can cinnamon rolls (8 count can)
8 Oreos (any flavor)

Directions:

Roll out each cinnamon roll, place Oreo in middle, fold edges over to cover.

Place seam side down on cookie sheet. Bake at 375F for 10 minutes.  Top with packet of frosting and Oreo crumbs, if desired. Don’t you just love this cinnamon roll hack? It’s the best of both worlds!

Last minute guest hacks - lorafied5 HACKS IN 15 MINUTES! Do you like surprise drop-ins from your in-laws or friends? While I love having a full house, my home isn’t always camera ready. Here are my last minute guest hacks for pulling it together fast! Grab your toothpaste, vanilla extract and set your timer!

First, make the house smell great. Simmer 2 teaspoons of vanilla for a welcoming smell!

This next one’s a little wacky but it works…grab your toothpaste! A dab on a paper towel will make your sink shine and no chemical smell left behind. Next, clear off the kitchen counters and load the dishwasher. And finally, straighten your bed. These last minute guest hacks are quick but make a big difference!

Laundry Soap - Home Ec Hacks - LORAfiedHow much laundry soap do you really need to get your clothes clean? Chances are, it’s a lot less than you think. Whether you use standard detergent, HE or pods, here’s the amount that gets the job done!

When using standard detergent, forget that line that’s already on the cap. Two tablespoons should be enough to do a regular load – measure it once and mark it with a sharpie!

HE laundry soap is even less – only two teaspoons per average cycle.

And unless it’s an extra large load, only one pod will do it! Remember, they never go in the dispenser, always in the machine. Not sure which temperature? Warm is your best bet.

Low Carb Diet and Keto Friendly: 2 Ingredient Reeses Hack

Reese's Hack - LORAfiedHow often do you crave chocolate? My answer: everyday! This no bake, keto, low carb Reeses hack is so easy and they’re beyond delicious! They even have the famous Reeses ridges on the edge.

Ingredients:

1 10oz. bag of sugar free chocolate chips (or a little more than 1 1/2 cups)
3/4 cup unsweetened nut or seed butter, I used chunky peanut butter

Directions:

Microwave chocolate and nut butter, stirring every 30 seconds until melted, should take less than 2 minutes, but will depend on microwave strength.

Scoop into cupcake holders and freeze for 30 minutes. Store in fridge or freezer. Use this 2 ingredient Reeses hack to satisfy your chocolate cravings as often as you’d like!

Fast and Easy Oven Baked Taco Hack You’ll Love

Taco Hack - LORAfiedAre you having tacos tonight or any night this week? Whether we’re able to get it together for Taco Tuesday or not, chances are, we will have tacos sometime during the week and this is my families favorite way to have them! Fast, easy and affordable your crew is going to love my oven baked taco hack! Easily make these GF, DF, vegan, veggie or low carb.

Directions:

Preheat oven to 350F. Place desired number of un-heated taco shells in baking dish, standing them straight up. If there’s space in the baking dish, fill space with tortilla chips.

Layer fillings in the following order: cheese (I use a nacho cheese, shredded or even plant based), prepared meat of choice or sautéed veggies, cheese. Bake for about 3-5 minutes. This will crisp the shells and melt the cheese at the same time! Try this taco hack tonight!

Super Simple 3 Ingredient Cinnamon Roll Hack

Cinnamon Roll Hack - LORAfiedDoes your family fight over the middle cinnamon roll? With 3 kids, the battle for the center bun was real every time I went to make them! This incredibly simple and affordable hack ensures each cinnamon roll is as gooey as the ones in the center. The best part, these taste like the expensive Cinnabon rolls at the mall food court! You’re going to flip over these!

Ingredients:

– 2 (Large, 5 count) cans cinnamon rolls, any brand
-1 cup heavy whipping cream
-1 cup brown sugar, I used dark, but any kind will work

Directions:

Preheat oven to 350F
Spray 9X13 pan

Spread the cinnamon rolls in the pan, leaving a little room between each, then, mix brown sugar and cream together and pour evenly over the top. Bake for about 30 minutes, you don’t want to over bake, so make to sure keep an eye on them and check around 25 minutes.

Last weekend was the unofficial summer kickoff and my family was jazzed! Among the items hitting our barbecue, good ol’ American hot dogs! If those are on your. summer BBQ list as well, you need this hot dog hack. It’s free, easy and will make your dogs hug worthy, I promise!

First step, skewer your hot dog. Then, take your pairing knife and place it at an angle – it’ll move up the hot dog as you turn the skewer.

Now grill and top! This way, your hot dogs will hold those toppings a lot better! Could this be the greatest hot dog hack ever?

Home-Ec Hacks: Measuring Cups Explained

Measuring cups - LORAfied Home Ec hacksHave you ever wondered why we have different measuring cups for wet and dry ingredients? Do we really need both? And what can you do in a pinch? The answers on this episode of my new series: Home-Ec Hacks!

While these two hold exactly the same amount, it’s almost impossible to get an accurate dry measurement in the wrong cup. 

But when you use the right one, you get a perfect measurement. The same is true for dry ingredients! Liquid measuring cups will give you an accurate read with no spilling. In a pinch, you can use the dry ingredient measuring cup for liquid, however, never use the wet measuring cup for dry ingredients- it’s just too risky for that recipe!

The Best Corn Hack to Make Shucking Easier

Corn Hack - LORAfiedWhat’s your favorite summer vegetable? Mine has to be corn! While I love it, I dread shucking it and try to assign that task to my husband Scooter or one of the kids whenever possible! If you’re the same, you’re going to love this corn hack!

Directions:

Go grab your corn and leave it the way it is. 1 ear – microwave on high 4 mins / 2 ears – microwave on high 8 mins. Then, your corn is done and ready to shuck!

Take a sharp knife and cut off the end. Then, take the bottom and start pushing it out. This corn hack is quick, easy and leaves you with silk free corn that’s ready to eat! I love to top it with butter and my Magic Seasoning. The kids take it a step further and add Parmesan cheese.

The Best Low Carb Diet Dinner: Creamy Chicken Recipe Hack

Creamy Chicken Hack - LORAfied

Are you looking for a simple and affordable dinner idea? This is it! My creamy chicken has a secret only you will know! With 3 basic ingredients and a little seasoning, you can have this in the oven in less than 5 minutes! It also makes great leftovers! It’s low carb and keto, but you’d never know it.

LORAfied Creamy Chicken

Ingredients:

2 pkg chicken breasts (I used thin sliced)
1 cup mayo, you can sub yogurt here
1/3 cup shredded Parmesan
1 tsp Magic Seasoning (recipe HERE)
1/2 tsp lemon pepper seasoning (optional)

Directions:

 

Place chicken in a lined pan, making a layer to cover the 9X13” dish. Mixed together mayo, parmesan, and seasoning. Spread on top of chicken. Bake at 350F about 30 minutes, or until done!
