Here’s a super tasty 5 ingredient hot chicken hack! It’s budget friendly, low carb and easy to make!
LORAfied Low Carb Hot Chicken Hack
Ingredients:
2 pkg boneless, skinless chicken thighs
Approx. 1 1/3 cup nut coating mix, I used a 5 oz. pkg from @diamondnuts
1/4 – 1/2 cup of cheese crisps, (or pork rinds) I used 1 pkg of @mrscubbisons
Note: use rolling pin on bag or food processor, turning to crumbs before measuring.
1 cup mayonnaise
2 Tbsp. Spicy hot rub, any brand
Directions:
Preheat over to 425F
Place parchment paper on baking sheet and top with baking rack.
Mix mayo and 1 Tbsp of rub together, pour over chicken, turning to coat.
Stir together nut mix, cheese crisps & 1 Tbsp of rub.
Dip chicken, one piece at a time, in coating.
Place on baking rack.
Bake approx. 25 minutes, or until done. Check at 20 mins, as ovens vary.
Serve on low carb buns, I use Smart Buns or Unbun and Primal Kitchen Buffalo Sauce!
