2 Ingredient Pineapple Upside Down Cake Hack

What’s better than an easy fantastic recipe? How about 2! My sweet Southern friend, Marada Chaffins and I are celebrating National Pineapple Upside-Down Cake Day from coast to coast! In this friendship recipe share we’re bringing you not one, but 2 new ways to make this American classic! My 2 ingredient Malibu Sunshine Cake will make you look like a baking superstar for nearly zero effort, while Marada’s Kentucky cast iron skillet version will knock your socks off! LORAFIED Malibu Sunshine Cake recipe below.

WHAT YOU’LL NEED:

1 box Angel Food Cake Mix (just add water version)

1 20 oz. Can Crushed Pineapple

INSTRUCTIONS:

Mix both together, pour into an ungreased, 9×13 baking dish. Bake at 350F for 25 minutes or so, depending on your oven. It will come out puffy and settle as it cools. Once cool, enjoy as is or top with whipped cream. Note: I’m not a pineapple or angle food cake person and I LOVE this cake! It has a very soufflé feel and tastes like vacation!

Here’s an Old School Baking Hack From Mom

Baking Hack

Do you use butter? We seem to go through a lot of it, especially when baking. When you open a new stick, what do you do with the wrapper? If you answered “toss it”, this baking hack is for you! This one comes from my 91 year old mom, Norma Jean, who considers saving money a sport. In her words, “there’s a lot of life left in those wrappers!”

Take the butter stick wrapper and fold it in half. Use it to grease a baking pan, skillet, ramekins, even chicken or fish. Stick it in a little baggy and then into the freezer and it’s ready to go the next time you need to grease a pan! You’ll be using this baking hack for years to come.

Easy and Fun 2 Ingredient Grilled Cheese Hack

Grilled Cheese Hack

How do you make grilled cheese? Usually a pan, with butter on the stove, right? It’s one of the first things I taught my kids to make on their own, but honestly, I still worried with them over an open flame. Combine that with the burnt bread probability at our house (which goes to the dogs) and you’re left thinking there has to be an easier way for a kid to make a snack, right? Run for your toaster, this hack is an ooey gooey goodie. Here’s a bonus, there’s no butter needed!

WHAT YOU’LL NEED:

2 slices any type of bread

Cheese of choice

Parchment paper

Note: You can make this GF and DF, too!

INSTRUCTIONS:

Grab your toaster, lay the cheese onto the slices of bread and wrap it up in parchment paper, sealing the edges. Then, pop it right into the toaster. Just a few minutes later and you’ll have yourself the perfect grilled cheese!

The Best Money Saving Hack for Leftover Chips

How many half eaten bags of chips and crackers are in your pantry? I’m embarrassed to tell you how many my kids had stuffed in mine! Let’s just say it was more than a dozen. Instead of tossing them, I turn them into little baggies of seasoning goodness. Mixing and matching different chip/cracker flavors.

Grab the chips to toss into a blender. Feel free to make your own flavor combo. Put the seasoning mix into zip lock bags, label and freeze for months! Great on chicken, fish, pork, and even meatloaf.

5 Simple Linen Closet Hacks For Small Spaces

Do you have a dedicated linen closet or has it turned into a catchall for your family? Here are 5 things that just make sense in my linen closet while keeping the kids and Scooter from using it as storage locker.

1. Clear Dividers

The Hack You Need to Wash Off Stubborn Hand Stains

Whether it’s a mishap with a marker, food coloring, pungent spices or craft paint/clay, I feel like someone in my house always has messy hands. This week, I did a number on my fingers while dying Easter eggs, even staining under my nails! Here’s a hack that works for those extra stubborn hand stains that lemon, vinegar and baking soda can’t budge.

Note: I use this only on the stained areas of my hands and wash with regular soap immediately after.

INSTRUCTIONS

Pour a bit of Oxi-Clean into a bowl and add the warmest water you can stand.

Give the stained areas of your hand a little scrub then wash with soap and water and the stains will melt away!

Easter Egg Hack - Rainbow Eggs

Have you ever heard of a rainbow egg? Give the family something to talk about with my wacky little take on deviled eggs! These are so colorful and cute, I’ll bet your kids might even try them them this year. This is a fun and easy Easter egg hack I’ll bet your mother-in-law didn’t see coming!

INSTRUCTIONS

Peel the eggs with my Hard Boiled Egg Hack then cut them into halves. Put 8-12 drops of food coloring into a bowl, pour boiling water over it and add a splash vinegar. Leave the egg halves in the colored water mixture for 5-10 minutes depending on how dark you want them. You’ll be using this Easter egg hack for years to come!

Do you need a quicker and easier way to peel hard boiled eggs? I did too, until I learned this egg hack I’ll bet you’ve never tried!

Low Carb Chicken Tenders

Trying to figure out what to make for dinner? These easy low carb bacon wrapped chicken tenders are a hit with everyone in my family! Quick, easy, no sugar! Make these tonight!

WHAT YOU’LL NEED:

1 pkg chicken tenders

1pkg bacon

1-2 tsp Magic Seasoning 

INSTRUCTIONS:

Season the chicken tenders and roll each one into a piece of bacon. Drizzle a little bit of no-soy teriyaki on top. Bake at 375F for about 25 – 30 minutes. I serve them with rice for the kids and for those of us who opt for a low carb diet, I serve them with cauliflower rice made with my magic seasoning!

Cheese Storing Hack That Will Save You Money

Cheese Hack

What do you do with leftover cheese? Feta and buffalo mozzarella are pricey, and they start going bad the minute you open them. Here’s a handy hack to help them last longer, saving you money!

Put the cheese in a container and cover it with a water and salt solution. Feta cheese will keep up to 3 weeks this way. Buffalo mozzarella for 1 week. This is one of my favorite money saving hacks!

6 Minute Cookie Cake Using Only 3 Ingredients

Cookie Cake Recipe

How hard would it be for you to choose between cookies and cake? If this is a tough decision, I have the answer: quite possibly the easiest cookie cake in the world!

WHAT YOU’LL NEED:

28 vanilla (or chocolate) sandwich cookies
1 tsp baking powder
1 cup of milk (I used organic half & half)

INSTRUCTIONS:

Separate the cookies and cream filling into different bowls. Crush the cookies into crumbs. Add the baking powder and milk, mix well. Stir in cream filling until well combined.

Pour into prepared 7” microwave baking dish and cook in microwave for 6 minutes and you’ll have the best cookie cake ever! Enjoy plain or frosted.

Peanut Butter Jar Snack Hack

Are you the type who scrapes the very last bit out of a peanut butter jar? If you don’t like wasting an ounce, this snack hack is for you! It’s the snack my husband, Scooter, cannot wrap his head around, but trust me, it’s delicious! It’s my take on overnight oats, but without the oats! Easy, low carb and full of fiber!

THE QUICK & EASY RECIPE

Grab your almost empty jar of peanut butter and add 2 TBS of chia seeds, 1/2 cup of any milk and a handful of frozen berries. Shake & store overnight in fridge. Optional add-ons include stevia, nuts or cinnamon!
