Here’s a 2 ingredient dirty keto (meaning keto-ish) low carb ice cream hack that will help hold you over. This is SO delicious! And if there was a better word for easy, I’d use it here!
Low Carb “Ice Cream” Hack
Ingredients:
1 tub sugar free whipping topping, I use Cool Whip
1 package Sugar Free Pudding, any flavor, I used vanilla
Directions:
Pour pudding packet into defrosted Cool Whip, mix well, making sure the pudding isn’t lumpy and has dissolved.
Freeze and enjoy!

Preheat oven to 400F. Slice onion and layer on bottom of pan, place chicken on top. Season both sides of chicken with taco seasoning (be careful to not over season.) Mix enchilada sauce and sour cream together, pour on top. Bake for 40-45 minutes.
