Maple Dijon Chicken (a.k.a. the Infamous “Man Pleasing Chicken”

Do you have a family recipe that’s been passed down for years, along with its ridiculous name? This is mine! It’s called Man Pleasing Chicken (awful name, but it’s delicious!) It’s one of my most requested recipes ever and earns 5 star reviews from men, women, and kids alike. It’s gluten free, dairy free, paleo-friendly… and ready in under an hour!

LORAfied “Man Pleasing” Chicken Recipe 🍗

Ingredients

  • ½ cup Dijon mustard
  • ¼ cup maple syrup
  • 1 tablespoon rice wine vinegar
  • 2 packages chicken thighs (any kind will work — I use bone-in, skin-on)
  • Optional: salt, pepper, and garlic powder to taste

Directions

  1. Preheat oven to 450°F.

  2. Whisk together Dijon mustard, maple syrup, and rice wine vinegar in a medium bowl.

  3. Arrange chicken thighs in a glass baking dish (line with parchment paper for easy cleanup). Sprinkle with salt, pepper, and garlic powder.

  4. Pour the mustard-maple mixture over the chicken, turning each piece to coat evenly.

  5. Bake for 40 minutes, turning halfway through, or until an instant-read thermometer reads 160–165°F.

  6. Rest for 5 minutes before serving.

  7. Serve with a drizzle of the sauce from the pan — pairs perfectly with roasted broccoli and baked sweet potatoes.

Ridiculous name aside, this chicken truly pleases everyone…even the picky eaters!
