Want to eat the delicious Starbucks pumpkin loaf without the price tag? Introducing my Starbucks pumpkin loaf copycat. It is easy, delicious, and tastes just like the original.
INGREDIENTS:
(Bowl 1)
4 eggs
1 cup avocado oil (or oil of choice)
2/3 cup water
1 (15 oz) can pure pureed pumpkin
1 cup packed brown sugar
(Bowl 2)
3 1/2 cups flour
2 cups white sugar
2 teaspoon baking soda
1 1/2 teaspoon salt
2 teaspoon ground cloves
1 teaspoon pumpkin pie spice
1/2 teaspoon ground nutmeg
4-8 tablespoons Pepitas (green pumpkin seeds)
In a large bowl, mix eggs, oil, water, pumpkin & brown sugar. Then in a separate medium bowl, whisk all remaining dry ingredients until combined. Pour dry into wet, mixing until well combined, the batter will be thick like brownie batter.
Pour into 2 prepared bread pans and top with seeds, I used 4 tbsp. of seeds on each loaf, but you can use less, if desired.
Bake for 1 hour.
After cooling completely, cut the loaf into even 1 inch slices.
