How much do you love pasta? It’s the number 1 thing my kids request, so it’s nice to have another option in rotation we can all eat. This one pot feta pasta is an easy dinner dream! It’s budget friendly, but looks super fancy. Works with GF pasta and vegan cheese, too! I tweaked the ingredients a little bit, making it healthier and easier.
LORAFIED Feta Pasta
1-2 pint tomatoes (I only used 1)
1 block of Feta cheese approx. 7-8oz. (any type, cow, sheep, goat, vegan)
1 box of pasta, about 12oz., pre-cooked (I used a low carb pasta)
Avocado Oil (note: I don’t heat EVOO because of it’s low smoke point)
Optional: add a little Parmesan cheese & fresh basil for topping.
Preheat oven to 400F. Put tomatoes in baking dish, drizzle with oil (approx. a 1/4 cup, just do what you feel) season and toss. Place cheese in middle, turning to coat in oil. Bake for 40 minutes.
Pull from oven, stir to combine cheese and tomatoes, fold in pasta and top with Parmesan cheese & basil if desired.
