Trader Joe’s Low Carb Hack

How many chicken Cesar salads have you eaten? I don’t even know how I’d begin to count 😂 This EASY + AFFORDABLE RECIPE is a fun take on an old favorite. I hope you love it as much as I do 🥰

My first secret? Grab their canned chicken. It’s so easy, and no one will ever know! It’s high protein, low carb, and super affordable.


Chicken Crust

2 cans Trader Joe’s chicken (drained) or 20 oz of chopped chicken
2/3 cup Parmesan cheese
2 tsp. Italian seasoning, optional (My Magic Seasoning works here, too)
1 egg (I assumed you had one of these in your fridge for this recipe 😉)

Start off by preheating your oven to 375F. To make our chicken crust, add your canned chicken, parmesan cheese, Italian seasoning, and an egg into your mixing bowl. The parmesan cheese actually acts as the glue of the crust!

Note: If you prefer to use my magic seasoning instead of Italian,  you can find the recipe here.

Just mix it up and form a round crust on parchment paper lined pizza stone or cookie sheet. The crust actually takes shape pretty quickly! Bake your crust for 40 mins at 375F and let it cool.

Once the crust is done baking, we are going to let our crust cool down and in the mean time, let’s mix up our Caesar salad topping. When tossing the salad, make sure to skip the croutons, but of course add the cheese and dressing, as they are both low carb.

This last ingredient is my secret weapon. Trader Joe’s garlic spread just adds something to it, and it’s also low carb. Spread it on top of your crust and add your salad right on top.
